A longstanding relationship with his regular suppliers ensures that Kieran is always able to select the freshest seafood available. Whether it be snapper from Yamba, West Australian crayfish, Hervey Bay scallops, king prawns straight from the trawler or Moreton Bay bugs – he changes his menu each morning to accommodate whatever is available that day.
But if steak, lamb or poultry are more to your liking then grain-fed beef from Terrarossa, South Australia, free range chicken from Kangaroo Island or even kangaroo or duckling can be found on the menu.
